Three Convenient and Delicious Menus with Kimchi - Information


There is always old Kimchi at refrigerators at most Korean home which they sometimes feel as head ache how to dispose. We would like to introduce three excellent Kimchi menus you could easily and conveniently prepare best convenient and delicious Kimchi menu with this old Kimchi without any special materials, Kimchi Jjim, nick name as Babdoduk – rice stealer, Kimchi Filaff – welcome and love to most children and Kimchijeon, snack or good side dish to drink together.
1.    Kimchi Jjim
Kimchi Jjim is normally made with well fermented and soured old Kimchi with fresh pork belly or pork neck without any process like appropriate cut. You should well boil down together until Kimchi is sufficiently well done and soften which takes longer times. If you prepare marinated pork and meat or fish and kelp broth, you could simply boil down Kimchi and pork with this broth. If you could buy readymade dried and kelp broth at Korean Supermarket near around, you could take easy cooking process like that.
 
1-1)         Prepared Materials for Two Personnel:
l  Main Materials : Well ripened Kimchi; full one piece (800g), Kimchi Pork Neck : 400 g. If you like pork, you could add more.
l  Marinated Materials for Pork : Some red pepper powders, Kimchi reside liquid; two big spoons, some cooking rice wine, chopped garlic; 1 big spoon, chopped ginger; 1/s spoon, some black pepper.  ,  
l  Marinated Materials for Kimchi : Some sesame oil, sugar; 1 spoon, Kimchi residue liquid; 1/2 cup. Dried fish broth; one cup.
l  Material for Kimchi Jjim Soup : Kimchi Residue soup; 1/2 cup, onion; half piece, green onion; 1/2 piece, dried fish and keip broth; 2 cups.
1-2)         Cooking Process
1-2-1) Mix Kimchi with Kimchi margination and keep for more than 20 minutes.
1-2-2) Cut Pork Neck as 2~3 pieces and mix it with margination for more than 20 minutes.
1-2-3) Add Kimchi margination materials and mix well.
1-2-4) Cut onion with big pieces and green onion with cross section cut by 2 ~3 pieces.
1-2-5) Lay onion and green onion at bottom and put pork and Kimchi on the bottom layer and pour Kimchi Jjim soup materials and boil down until Jjim soup becomes half quantity under closed cover and low heat condition.
1-2-6) When Kimchi becomes well-done, please check salt level and add salt, if needed. Please pick up pork bulk piece and cut it with proper piece for convenient eat like photo
1-2-7) Put cut pork pieces on proper dish and add Kimchi and Jjim soup and serve   

Check Point: If you could not buy readymade dried fish and kelp soup, please boil dried and sliced walleyed Pollack, dried anchovy, kelp and laddish. When it comes boil up, please remove the kelp and continuously boil down under low heat for about half an hour. As finish the boiling, please pour soup and remove all remaining materials. we are going to use remaining radishes which we could use bottom materials at Kimchi Jjim soup and becomes unique taste along with other materials.

2. Kimchi Filaff
People could feel Kimchi Filaff is very special menu when they hear some unfamiliar menu “Filaff”. But it is very simple menu which we could simply top Italian cheese on Kimchi fried rice. We could adjust salt level at Kimchi fried rice with Gochujang (red pepper paste and Ganjang (Soya sauce) in order to make less greasy coming from cheese on top.
 
2-1) Materials for Two Personnel:
Kimchi; 200g, Potato; 1/2piece, onion 1/2 piece, carrot; 1/3 piece, bacon; 2 pieces(you could replace it with ham), some cocktail shrimp, some refined rice wine, some olive oil. Some pizza cheese, cooled rice; two bowl, some Gochujang, some oyster sauce; 1 spoon, cheddar sliced cheese; 2 sheet, some parsley powder, sugar; 1 spoon, some sesame oil and flying fish roe.
2-2) Cooking Process
2-2-1)
Remove Kimchi fillings and properly chop it for convenient size and also chop onion, potato, carrot and bacon (or ham).
2-2-2) Parboil cocktail shrimp under refined rice wine additives which remove fish smell and remove water on the shrimp
2-2-3) pour olive oil on the pan and fry potato, onion, carrot. When potato is cooked, please add chopped Kimchi along with bacon and keep frying all until Kimchi is cooked and finally add sugar..
2-2-4) You could now add cool rice to fried Kimchi and others and continue to fry all materials together until sufficiently cooked and add pour 2 ~3 drops of sesame oil.
2-2-5) Please add Gochujang, oyster sauce and flying fish roe and fry for a while. s
2-2-6) Take all materials at 2-2-5) in the heat resistance ware and topping pizza cheese,  sliced cheddar cheese and parsley powders and cook it on microwave until cheeses are properly melted.
Check Point: When you add sugar to fried Kimchi, the sugar would somewhat take role of neutralize acidic taste at the Kimchi and give shiny for encouraging diet. When you fry the cool rice along with Kimchi and others, please add sesame oil to rice first and fry all materials under vertical standing spatula so that rice is not much diminished. As you do topping, you should sufficiently cover cheese on top of fried rice which give you cheese taste going well with fried Kimchi rice.

3.    Kimchi Jeon – Kimchi Pan Cake 
We used rice powders instead of normal pancake powders and found this rice powder is better digestion and lessening wheat starch adverse effect. This rice powders are normally more wet and sticky. Please either reduce quantity of rice powder or add dried sticky rice powder for proper wet and sticky. If you like to enjoy crisp taste, you may add some potato powder to rice powders. If you like to try to enjoy good Korean taste, you could add Gochujang instead of red pepper powders as traditional Korean Gochujang Tteok (pan cake)..       
3-1) Materials for Two Personnel
Kimchi; 4 leafs, squid; 1/2 piece, some chopped shrimp, green chili pepper; 1 piece, potato; 1 piece, stirred eggs; 2~3 eggs, chopped garlic; 1/2 spoon, Gochujang (red pepper paste); 2~3 spoons, refined rice wine; 1 spoon, rice pan cake powders; 1 big spoons, water; 1/4 cup, some salt, some black pepper, some olive oil and some ingredient soya sauce (Soya sauce; 2 spoons, vinegar; 1 spoon, properly cut onion)

3-2) Cooking Process
3-2-1) Remove Kimchi fillings and properly chop it for convenient size and cut green pepper.
3-2-2) Clean squid and parboil it with some salt and pick it up and chop in small size.
3-2-3) Mix all materials like chopped Kimchi, green peppers, chopped squid and grated  potato.
3-3-4) Add all sub materials like stirred eggs, chopped garlic, Gochujang, refined rice wine, pancake rice powders to above 3-2-3) and make knead dough under pouring water some by some and step by step. Please add black pepper and salt depend on individual.
3-3-5) Pour olive oil on pan until the pan is fully and sufficiently covered. Please drop knead dough with suitable size on the oily pan and bake it upside down until panned cake skin turn out as yellow skin, crispy.

Check Point : Please sufficiently over olive oil on the pan and cook the knead dough under low heat and slow cooking until edge of pancake turn out as yellow and trun upside down so that you could prevent it from possible breakdown of pan cake during upside down works.

Updating Different Samcheonsa Temple Course to Baewundae Summit Hike to 2018-04-20 Seoul Bukhansan Mountain Climb in Korea-Baewundae Summit Course – Short Interview with Hungarian Climber


1.   Date and Time : Jan 17, 2018 09:30 ~17:30 (8 hours including one hour break).
2.   Location : Eunpyeong-gu (District), Seoul City, Korea
3. Distance and Course : About 12.0km. Course is to start at Samcheonsa Temple Parking Lot => Buwangdong Amun => Yonghwasa Temple => Jungheungsa Temple => Taegosa Temple => Bukhansan Shelter => Yongamun-small gate and Uimun- small gate => Baewundae Summit (836m Altitude) and back to Samcheonsa Temple Parking Lot. 4.     Overall Mountain Explanation.
Inside the Samgaksan mountain, alternative name of Bukhansan and triangle mountain among Baekwundae Summit (836.5M Altitude), Mankyungdae Peak (799.5m Altitude) and Insubong Peak ( 830.6m Altitude) as nominated as a National Park, there are lots of clean and spectacular valleys among major rock peaks made of granite. It gives a beautiful view, and there live over 10,300 species of animals and plants inside. Also, it offers various historical and cultural relics including Bukhansansung (Fortress) which has the history of 2,000 years since the era of 3 States and over 100 temples and shrines. It is known to climbers that hiking course from Uisangbong Peak to Munsubong Peak through Yongcheulbong Peak, Yeonghyeolbong Peak, Jeungchuibong Peak, Nawolbong Peak, Nahanbong Peak, 715 Bong Peak are the most hard and severe hike course at Bukhansan Mountain.
5.   Detailed Hike Course Explanation.
I parked a personal car at Samcheonsa temple today, at North West Seoul since I started to ascend to Buamdong Amun (small gate at fort castle) from Samcheonsa temple and going straight down at the Amun Junction heading to Buheungsagi, Yonghwasa Temple, Jungheungsa Temple, Taegosa Temple, Bukhansan Shelter, Yongamun-small gate, Uimun- small gate and 836m Altitude Baewundae Summit. As see at the Photo at Samcheonsa temple. I started at Samcheonsa Temple and climbed usual course between Samcheonsa Temple and Buwangdong Amun through slopped rocky and stony stream road for about one and half an hour and reached first planed point, Buwangdong Amun where I could go to Munsubong Peak at right, Uisangbong Peak at left and straight 500m to Buheungsagi. I took straight and walked down for about a quarter minutes and reached Sanyongru Pavilion where I could look down beautiful frozen valley Stream. I shortly took a break for photo and video shot as see at the attached. I walked on mild sloped stony road and saw many climbers going up or down, even under normal working days. I could feel our country, Korea has been getting into welfare country since these many people provably personal off or vacation. When I was young, 40 years ago, I was working at every Saturday and could not think this kind of personal off or break, long times passing and situation changing a lot. Anyway I walked on this road and passing by Jungheungsa Temple and found junction mark as see at the photo: 800m to Bukhansan Shelter and 2.4km to Baewundae Summit at left and 2 km to Daenammun at right and turned left at the junction starting climb on very steep uphill road for about 10 minutes and saw so clear and grey white Nojeokbong Peak at left and confirmed I was closing to Baewundae Summit. I kept on walking somewhat hard steep road for about half an hour and met next junction mark: 200m to Yong Amun and 1.7km to Baekwundae Summit at left and 1.3km to Daedong Mun (Great East Gate) and turned left at the junction and continuously climbed over the hard road for about 10 minutes and met one Hungarian visiting to Korea first time staying for 4 night and well satisfied to stay in Korea. I offered short interview to him and had a short interview at the video attached. When I asked him if he lies to come over Korea again, he positively answered “Of Course Yes” as see at the video. I moved up and passed Yong Amun as soon as I finished the interview and carried on climb for about 20 minutes and reached landmark stating as 900m to the Baewundae Summit at right. I found climb road getting tougher and harder according to elevation and time passing. As I climbed these hard Rocky road for about q quarter minutes, I saw clear and very pleased picture of Baewundae Summit flagging on top at left and made nice photo shot. As I just walking at Uimun Junction, I met Holland young couple climbing Bukhansan Mountain and talked for a while and found their information of Korea mountains like Bukhansan were limited and not sufficient to foreigners. So I showed my blooger and explained there are some information which foreigner could uas as an advance information prior to their visit to Korea. They told they were pleased to know my blogger information willing to introduce it to their friends. Anyhow I moved up to the Summit for 30 minutes   and touched down the Baewundae Summit, 836m altitude and looking around the summit and confirmed to me it was well and enough worthwhile that I made so hard and difficult hike for so long time for some more 4 hours. On the way down I saw Insubong Peak, 2nd highest and Mankyungdae, 3rd highest peak and kept the picture at the photo and video as see at the attached and backed to the Samcheonsa Temple through the same raod as I ascended this morning.

Korea Student’s Life Satisfaction is Lowest While Their Academic Achievement is Highest among OCED Members / 2015 Pisa Report - Information


This summary has been made referring to 2015 PISA Student Well-being Report which was made with worldwide 540,000 students above 15 years old and based on remarks as Perfect is 10 point and Nothing is 0 point. Korea Students were recorded as 6.36 point which was ranking 27, 2nd lowest and just above Turkey among 28 OECD members. They were at the same rake among 48 countries, non OECD members as 47th rank just above Turkey like above. On the other and top groups were swept by European countries like Finland, Iceland, Swiss and so on.          

1.       Korea Student’s Academic Achievement is Highest but their Life Satisfaction Lower.
Korea Student’s academic achievement is top level but their life satisfaction lowest among OECD members. They are starting private tuition at the earliest age and longest studding times while physical exercise and talking about their life with parent is lowest at bottom.
Korea student’s academic achievement was recorded as Reading and writing as 3 ~ 8th, Mathematics 1st ~ 4th, Science 5th ~ 8th which was the highest level or group. But their life satisfaction is lowest level which was unbalance between student study performance and their life satisfaction. But students at European countries were well balancing between these objects, Student performance and their life satisfaction like Finland, Netherland, Swiss and etc.
2. Surprisingly 82% Korea Student want Top at Their Class While 75% at Grade Stress
It was turned out at the Report most Korea students strongly want top at class who want to catch best academic achievement. These kinds of students were 80% which much higher than OECD average, 59%. They were also highly concerning about their study grade, bad result which was recorded as 75% against OECD average, 66%.
3.      Longest Studding Time  
Korea student’s studding time is longest in and out school. 23.2% of Korea Students answered as to the question about 60 hours study per week as “Yes” which is much higher than OECD average, 13.3% and almost double. Korea students were normally starting to take private tuition at earliest 9 years old after school which is 11 years old at OECD average age. It was known as latest age was 13 years old in Iceland. Korea students, 9.7% answered to questions about the reason why they take extra private tuition as their interest while 52.2 % students were answered the reason as for upgrading their study performance grade which was slightly more than half.      

It turned out that longer study time became commonly and normally as decreasing academic achievement at the average OECD. But it strangely and uniquely turned out in Korea that students studding longer were high level at bot, study achievement as well as life satisfaction. For example, Korea students studding more than 60 hours a week were recorded as 6.6 point at question about life satisfaction which is 0.3 point higher than the 6.3 point at the students studding less than 40 hours a week.
One of Pisa said “It is normal that lower grading students are taking extra tuition after school. But higher grading students are somewhat strangely taking extra tuition after the school in Korea. Therefore they could obtain and reach higher grade result against compensation to longer and harder study and accordingly receive parent’s praise and teacher’s attention and eventually are satisfied to their life

            4.      Lowest and Poor Level Physical Exercise  

Korea students were normally less physical exercise lowest level among OECD members. Only 46.3% Korea students were exercising after or before the school which means more than half Korea students were not exercising at all and lowest and bottom of OECD members. Korea students, 19.8% answered to the question if they have been exercising more than 60 minutes as “No” which means one student out of five students as No exercise and which were at bottom level just less than Japan, 26.9%.
5. Only 54% Parent Dialogue with Students Almost Every Day.
Koran student’s dialogue time with their parent was comparably less than other student at OECD members. Korea parents, 33% answered to the question if they every day dialogue with their children as “Yes” and almost every day as 53.7% which is still less than half.

When we receive question from foreigners about best destination in Seoul, we used to face somewhat embarrassing position since we have normally not think this point in our mind. I have experienced such awkward situation onetime when I got friend’s proposal taking a look around best destination in Seoul together. I have normally and seriously thought this issue and just simply pass away such issue since that is no sweat and simple. But I found it was not so easy and simple as I thought before. Therefore I have checked and reviewed the best seven destinations in Seoul which we could cover daily tour and selected following seven best destinations in reference to my friends working or experiencing at relevant tour field as below.
1.      Secret Garden Behind Changdeokgung Palace and Changkyeonggung Palace
If you get a proposal foreigners like to take a look around royal palaces, you may suggest Secret Garden Behind Changdeokgung Palace and Changkyeonggung Palace since these palaces may not be known to foreigners as Kyeongbokgung Palace but quite and beautiful palace garden. When Kyeongbokgung Palace was destroyed by Japanese invasion, this Changdeokgung Palace had been playing a role of alternative main palace for 258 years which most kings at Joseon Dynasty was loving as priority palace. Kyeongbokgung has been presently under recovery process works but Changdeokgung and its relevant halls comparably keeping its original structure and shape which we could easily figure King’s life at Joseon Dynasty.
Secret garden behand Changdeokgung is one of the best place along with Buyeonggi Pond which is spreading at 462,000 m2. When you walk at small transitional path lined up with traditional Korea houses, you could face traditional tea shop and café and restaurant. You could enjoy nice traditional Korean tea and look down neat view of Korea house village which you might feel you become noble people at Joseon Dynasty
3.      Hongdae – Yeonnam Dong

Some foreigners learning Korean at Yeonsei University for several month  said “We may call Itaewon is foreigner’s area while this Yeonnam Dong is Korean style as well as foreign style. We do not feel any inconvenience at Yeonnam Dong culture”
She recommends playground in front of Hongdae University should be the best place which everybody could take a cup of draught bear and enjoy unknown musician performance at the playground and fully immersed to Hongdae mood. If foreigners like to take shopping, you could guide them to shopping road from Hongdae Station to Sangsang Maeul (Imagine Village). 4.      Seongsan Daekyeo Bridge – one of Han River Bridge and Han River Park
We said sometimes width of worldwide well known to the people like River Thames in London or River Seine in Paris are much smaller than that at Han River in Seoul. not wider Han River in Seoul. Some foreigners visiting to see Han River said Han River is not river but sea because it is much wider. Therefore It should be a good location we could take foreign visitors to wonderful and fantastic Han River night scenery. We aggressively suggest you may take them to Han River Park where they could see not only awesome night view of Han River but also gorgeous longer bridge at the Han River. There are 28 bridges at the Han River. We call Seongsan Daekyeo Bridge is the best night view which is related with unique design of bridge column and used to appear at several TV drama or movie. You could see beautiful night view of Seoul at the Han River park regardless what time because they are lighting always all days. If you take a cup of bear with chicken, calling as Chimaek and looking around fantastic night secenery, it should be a unforgettable memory to foreign visitors.     
Tip: Banpo Daekyeo Bridge is also reputedly known to foreigners as nice spot where they could see peculiars picture of falling down water with colorful light from the bridge, calling as Moon Light and Rainbow Spring Show.  
5.      K Star Road at Cheongdam Dong 

There are many bear monument imaging top star idol group at Cheongdam Dong K Star Road from Apgujeong Dong to Cheongdam Dong and JYP head office adjacent to this road which is under plan moving to New Head Office at Seongnae Dong soon. One coffee shop just crossing over JYP Head Office is known to JYP foreign fans as their Mecca. There is SMT Restaurant at this road which is running by SM entertainment company, IDOL Group. .

Most People was concerning that K Star Road was made suddenly and shortly which would be sloppy works and arrangement. But most idol fans were unexpectedly pleased and easily satisfied to the fact they visited the K Star Road where popular idol group walked and visited at TV drama or movie.
Two German hot fans to Nichkhun, member of 2pm at JYP said “ We are really hot fans to Nichkhun and come over Korea first time for Nichkhun’s Birthday. We used directly to arrange K Pop event in Germany sometimes. We are quite satisfied to take an opportunity to take meals at the Street Restaurant running by JYP and get a chance to touch idol hand bronze print. We have been a good experience to do that”

6.      Myeong Dong

Myeong Dong, optimally arranging for shopping is worthwhile to visit with foreigners because most foreign visitors satisfying to so active Korean movement as they sometimes lost their original plan or schedule.

One Philippine Tourer said “I could enjoy buying Korean products with much lower price here in Myeong Dong than that at Philippine and additionally tax free. There are many reputed brand products close by so that I could easily take around all relevant shops at the same time and conveniently comparing”. Please note food price is normally higher than average price at other places because of land and shop rental price is highest in Korea. Foreign visitors could take a chance to see active shopping area.

7.      Yongsan War Memorial Hall
